White Chicken Chili

White Chicken Chili Recipe by Howard’s Creek Authentic Beer Cheese

Equipment:

Dutch oven

Ingredients:

1 pound dried white navy or northern beans
Chili seasonings
Garlic salt
Black pepper
1 medium chopped onion chopped
8 slices of Browning’s Country Bacon – cut bacon into small pieces, cook, and set aside 4 slices chopped for garnish
2 or 3 raw boneless, skinless white chicken breasts chopped into large bite-sized pieces
5 to 6 cups of water
Fresh or canned mild green chilis  chopped – reserve some for garnish
8-ounce container of Howard’s Creek Authentic or BOLD Beer Cheese

Directions:

Sort beans and discard any foreign materials. Rinse thoroughly. Soak overnight in a large pot with water several inches above the beans or use the quick soak method; boil beans in 5 to 6 cups of water for 5 minutes; then remove from heat, cover, and let stand for 1 hour. (This is the “quick-soak” method.) After soaking, rinse several times again to take the “gases” out of the beans. Add fresh water to an inch above the beans. Add chopped onion and raw chicken breasts. Bring to a boil and simmer for an additional 1 to 2 hours. Add the cooked 4 slices of bacon and most of the chopped green chilis.  Salt and pepper to taste. Simmer until the beans are tender and thickened; approximately 1 hour. Stir occasionally to prevent scorching. Thin with water if necessary. Right before serving, layer green chilies for some fresh chili flavor, top with a large dollop of Howard’s Creek Authentic or BOLD Beer Cheese, and sprinkle chopped cooked bacon. Enjoy!
